  • Muffin batter
  • 175 g Sugar
  • 3 g Salt
  • 300 g All-purpose flour
  • 10 g Baking powder
  • 5 g Grated lemon zest
  • 100 g Eggs (2 eggs)
  • 185 g Heavy cream or creme fraiche
  • 125 g Unsalted butter, melted
  • 200 g Blueberries
  • Crunchy crumble topping:
  • 30 g Butter, chilled
  • 30 g Sugar
  • 30 g All-purpose flour
  • 30 g Almond flour
  1. Instructions
  2. Sift together sugar, salt, flour, and baking powder in a bowl. Add lemon zest.
  3. In another bowl combine eggs, cream, and butter.
  4. Add dry ingredients into the wet, mixing just to combine, then add half of the blueberries.
  5. Distribute the batter evenly into the paper-lined cups of 12x muffin tin.
  6. Sprinkle with the remaining blueberries and the crumble we made earlier.
  7. Put the tin into the preheated to 180ºC oven for about 20 min.
  8. Transfer to a wire rack to cool completely before eating.

My tips for the perfect blueberry muffins

*You can use fresh or frozen blueberries for this recipe. If you cook with frozen, there is no need to defrost them, just toss them into flour and add to the batter.

*This recipe’s secret ingredient is heavy cream, which is unusual for a muffin recipe. Normally, you would add milk or yogurt, but believe me, heavy cream makes all the difference! That’s why the texture of these blueberry muffins is so unique!

* It is always a problem for a home cook to know for how long to mix the batter, what texture is good, and when you need to stop mixing. This skill comes with practice. My tip for you is to always follow the recipe precisely. Mix the butter gently yet with confidence until all the ingredients make a homogenous mixture and then stop.
